How to Make S Mores Cookie Bars

  1. Preheat oven to 350°F (175°C).
  2. Line a 13x9 inch baking dish with foil, leaving an overhang on the sides for easy removal. Grease the foil.
  3. In a medium bowl, whisk together 1 ½ cups all-purpose flour, 1 cup graham cracker crumbs, 1 teaspoon baking powder, and ½ teaspoon salt.
  4. In a large bowl, cream together 1 cup (2 sticks) unsalted butter and 1 ½ cups granulated sugar until light and fluffy (about 2 minutes). Beat in 2 large eggs one at a time.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Divide the dough in half.
  7. Press half of the dough into the prepared pan.
  8. Spread an even layer of your favorite marshmallow topping (about 1 cup) over the dough. Sprinkle with 1 ½ cups chocolate chips.
  9. Crumble the remaining dough over the marshmallow layer, allowing some marshmallow and chocolate chips to peek through.
  10. Bake for 30-35 minutes, or until the edges are golden brown and the center is set.
  11. Immediately after removing from the oven, sprinkle the remaining ½ cup chocolate chips over the top.
  12. Let cool completely in the pan. Once cooled, lift the bars out of the pan using the foil overhang.
  13. Chill for at least 1 hour (or overnight) for easier cutting and serving.
