How to Make Salted Caramel Treats

  1. In a medium saucepan, combine 1 cup granulated sugar, 1/2 cup light corn syrup, 1/4 cup water, and 1/4 cup heavy cream. Cook over medium-low heat, stirring constantly, until sugar dissolves.
  2. Continue cooking, without stirring, until the mixture reaches 245°F (118°C) on a candy thermometer (firm-ball stage).
  3. Remove from heat and carefully whisk in 1/4 cup (1/2 stick) unsalted butter and 1 teaspoon sea salt until smooth and combined.
  4. Line a 13x9 inch baking dish with non-stick aluminum foil, leaving a 2-inch overhang on all sides.
  5. In a large saucepan, melt 6 tablespoons (3/4 stick) unsalted butter over medium-low heat.
  6. Add 10 ounces (about 4 cups) mini marshmallows and stir constantly with a rubber spatula until completely melted and smooth.
  7. Stir in 1 teaspoon vanilla extract, 1 teaspoon sea salt, and 1 cup of the prepared salted caramel sauce until well combined.
  8. Remove from heat and gently stir in 5 cups Rice Krispies cereal until evenly coated.
  9. Quickly transfer the mixture to the prepared baking dish and press evenly into the corners.
  10. Pour the remaining caramel sauce over the top and sprinkle with an additional 1/2 teaspoon sea salt.
  11. Let cool completely at room temperature (at least 2 hours).
  12. Lift the treats out of the pan using the foil overhang and cut into 24 squares.
