How to Make Savoury Sausage Picnic Loaf
- Preheat oven to 180°C (350°F).
- In a large bowl, combine 500g pork sausages (removed from casings), 1 cup diced carrots, 1/2 cup diced celery, 1/2 cup frozen peas, 1/2 cup breadcrumbs, 1 large egg, 1 tablespoon Worcestershire sauce, 1 teaspoon dried thyme, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
- Lightly grease a 9x5 inch loaf pan.
- Spoon the sausage mixture into the prepared loaf pan, pressing down firmly to compact.
- Cover the loaf pan with foil.
- Bake for 1 hour and 15 minutes, or until the internal temperature reaches 75°C (165°F).
- Remove the foil and bake for a further 15 minutes to brown the top slightly.
- Remove from oven and let the loaf stand in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Once cooled, refrigerate for at least 2 hours to allow flavors to meld.
- Slice thinly and serve cold. Enjoy with tomato sauce!
