How to Make Simple Bulgarian Banitsa
- Preheat oven to 350°F (175°C). Grease a 9x13 inch baking pan with melted butter.
- In a medium bowl, whisk together the eggs, milk, and salt until light and frothy.
- Gently fold in the crumbled feta cheese.
- Lay down 5 sheets of phyllo dough in the prepared pan, brushing each sheet generously with melted butter. (You can also butter each sheet individually).
- Pour half of the cheese mixture over the phyllo sheets.
- Top with 3 more sheets of phyllo, brushing with melted butter.
- Repeat layers: 3 sheets of phyllo (buttered), remaining cheese mixture, and finally at least 2 more sheets of phyllo. Do not butter the top layer(s).
- Bake for 25-35 minutes, or until the banitsa is golden brown and the filling is cooked through. Check for doneness by inserting a knife into the center – the filling should not be runny.
- Once baked, cover the banitsa with a clean kitchen towel or the pan lid and let it rest for at least 15 minutes before slicing and serving. This allows the phyllo to soften.
