How to Make Apples In Phyllo

  1. Preheat oven to 400°F (200°C).
  2. Peel, core, and thinly slice 6 medium apples (about 3 pounds).
  3. In a large bowl, toss apples with 2 tablespoons lemon juice to prevent browning.
  4. Add 1/2 cup granulated sugar, 1/4 cup packed brown sugar, 1 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg, and 1/4 cup chopped walnuts to the apples. Gently toss to combine.
  5. Prepare phyllo dough according to package directions to prevent drying. Cut each phyllo sheet in half lengthwise.
  6. Lightly grease a clean kitchen towel with melted butter.
  7. Place one cut phyllo sheet on the damp towel. Brush lightly with 1 teaspoon melted butter.
  8. Sprinkle with 2 teaspoons of the walnut crumbs.
  9. Top with another phyllo half sheet. Brush with 1 teaspoon melted butter.
  10. Place 1/2 cup of the apple filling on the short end of the phyllo, about 2 inches from the edge.
  11. Add 1 teaspoon of the apple juice mixture to help with sealing.
  12. Fold the end over the filling, roll once, then fold in both sides by 1/2 inch.
  13. Continue rolling to the other end, tucking in the edges and sealing.
  14. Place the bundle seam-down on a baking sheet sprayed with cooking spray.
  15. Repeat steps 7-14 until all phyllo and filling are used. You should have approximately 9 bundles.
  16. Cover the baking sheet with a damp kitchen towel while you prepare the second tray.
  17. Once all the bundles are on the baking sheets, brush each with remaining melted butter. Bake for 24 minutes, or until golden brown and crispy.
  18. Once baked, immediately tilt the baking sheet to let excess juices run off. Brush the juices over the bundles while still warm.
  19. Serve warm and enjoy!
