How to Make Southwest Beefy

  1. Butter both sides of 2 slices of bread (wheat or rye).
  2. Place one slice of bread, butter-side down, on a preheated grill or griddle.
  3. Top with 1/4 cup shredded cheddar cheese.
  4. On the other slice of bread, layer 3-4 slices of thinly sliced beef (about 4 oz), and 1-2 tablespoons of chopped green chilies.
  5. Place the beef-topped bread slice on top of the cheese-covered slice to form a sandwich.
  6. Grill for 3-4 minutes per side, or until the bread is golden brown and the cheese is melted and bubbly.
  7. Remove from grill, slice diagonally, and serve immediately with a dill pickle spear and your favorite fries or chips.
