How to Make Spiced Watermelon Honey

  1. Remove all green outer rind and red watermelon flesh. Reserve only the white rind (approximately 6 cups when chopped).
  2. Using a food processor with a coarse blade, chop the white rind until finely processed.
  3. Place the chopped rind in a large saucepan or stockpot and add enough water to cover.
  4. Bring to a simmer over medium heat. Cook uncovered for 25 minutes, or until the rind is translucent and tender.
  5. Add 4 cups of granulated sugar and the juice of 1 lemon.
  6. In a cheesecloth bag, combine 2 cinnamon sticks, 1 teaspoon ground cloves, 1/2 teaspoon ground ginger, and 1/4 teaspoon ground nutmeg. Add the spice bag and 1 teaspoon of salt to the saucepan.
  7. Reduce heat to low, and stir frequently for 1 hour, or until the mixture has thickened to a honey-like consistency. (The cooking time may vary depending on your stove and desired consistency).
  8. Remove the spice bag and discard.
  9. Ladle the hot mixture into sterilized jars, leaving about 1/4 inch headspace.
  10. Seal the jars tightly.
  11. Yield: Approximately 2 1/2 pints of spiced watermelon honey.
