How to Make Spiced Watermelon Honey
- Remove all green outer rind and red watermelon flesh. Reserve only the white rind (approximately 6 cups when chopped).
- Using a food processor with a coarse blade, chop the white rind until finely processed.
- Place the chopped rind in a large saucepan or stockpot and add enough water to cover.
- Bring to a simmer over medium heat. Cook uncovered for 25 minutes, or until the rind is translucent and tender.
- Add 4 cups of granulated sugar and the juice of 1 lemon.
- In a cheesecloth bag, combine 2 cinnamon sticks, 1 teaspoon ground cloves, 1/2 teaspoon ground ginger, and 1/4 teaspoon ground nutmeg. Add the spice bag and 1 teaspoon of salt to the saucepan.
- Reduce heat to low, and stir frequently for 1 hour, or until the mixture has thickened to a honey-like consistency. (The cooking time may vary depending on your stove and desired consistency).
- Remove the spice bag and discard.
- Ladle the hot mixture into sterilized jars, leaving about 1/4 inch headspace.
- Seal the jars tightly.
- Yield: Approximately 2 1/2 pints of spiced watermelon honey.
