How to Make Exotic Fruits Barbecue Marinade

  1. Preheat oven to 350°F (175°C). Roast 1 tbsp coriander seeds, 2 star anise, 4 cloves, and 4 cardamom pods for 5-7 minutes, or until fragrant. Let cool slightly, then grind to a powder using a mortar and pestle or spice grinder.
  2. Roughly chop 2 stalks of lemongrass and gently crush to release their flavor.
  3. In a medium bowl, whisk together the roasted spice blend, crushed lemongrass, 1/2 cup mango puree, 1/4 cup pineapple juice, 2 tbsp lime juice, 1 tbsp soy sauce, 1 tbsp brown sugar, 1 tsp grated ginger, and 1/2 tsp red pepper flakes.
  4. Add your meat (approximately 2 lbs) to a large resealable bag or bowl. Pour the marinade over the meat, ensuring it's fully coated.
