How to Make Strawberry Rhubarb Ice Pops

  1. Combine 1 cup chopped rhubarb, 1/2 cup granulated sugar, and 1/2 cup water in a saucepan.
  2. Bring the mixture to a boil over medium-high heat.
  3. Reduce heat to low and simmer uncovered for 10-15 minutes, or until the rhubarb is tender and the mixture has thickened slightly.
  4. Remove from heat and let cool completely.
  5. Once cooled, reserve 3/4 cup of the rhubarb mixture and set aside.
  6. In a large bowl, gently combine 2 cups sliced strawberries, 1/2 cup plain yogurt, 1/4 cup applesauce, the reserved 3/4 cup rhubarb mixture, and a few drops of red food coloring (optional).
  7. Fill popsicle molds or small cups about 3/4 full with the fruit mixture.
  8. Insert popsicle sticks into each mold or cup.
  9. Freeze for at least 4-6 hours, or until solid.
  10. To remove the pops, run the molds under warm water for a few seconds before gently pulling out the frozen treats.
