How to Make Stuffed Apples

  1. Preheat oven to 350°F (175°C).
  2. Prepare 1 cup of stuffing mix according to package directions.
  3. In a large skillet, cook 1 pound sausage over medium-high heat, breaking it up with a spoon, until no longer pink. About 8-10 minutes.
  4. Remove sausage with a slotted spoon, reserving 2 tablespoons of drippings in the skillet. Drain sausage on paper towels and set aside.
  5. In a small bowl, whisk together 1/4 cup water and 2 tablespoons lemon juice. Set aside.
  6. Cut 6 medium apples in half, through the stem and bottom. Scoop out the apple pulp and cores, leaving a 1/4-inch shell.
  7. Brush the cut sides of the apple shells with the lemon juice mixture.
  8. Discard apple cores and seeds. Finely chop the apple pulp and set aside.
  9. Add 1/2 medium onion, chopped, to the skillet with the reserved sausage drippings. Sauté over medium-high heat for 5-10 minutes, or until the onion is softened and translucent.
  10. Add the chopped apple pulp to the skillet and cook for another 3-5 minutes, until softened and any excess liquid has evaporated.
  11. In a large bowl, combine the prepared stuffing, apple mixture, cooked sausage, and 2 tablespoons of chopped fresh parsley.
  12. Spoon the stuffing mixture evenly into the apple shells.
  13. Place the stuffed apples in a 13x9 inch baking pan. Pour 1 cup apple cider around the apples.
  14. Bake for 30-40 minutes, or until the apples are tender and the stuffing is heated through.
  15. Garnish with extra parsley, if desired. Serve warm.
