How to Make Toasted Mushroom Roll Ups
- Preheat oven to 400°F (200°C).
- In a large skillet, melt 1 tablespoon of margarine over medium heat.
- Add the sliced mushrooms, chopped onion, and bell pepper. Sauté for 5-7 minutes, or until the vegetables are tender.
- Stir in the minced garlic and sauté for 1 minute more, until fragrant.
- Remove from heat and stir in the mozzarella cheese and chopped basil. Season generously with salt and pepper to taste. Set aside to cool slightly.
- Gently roll out each slice of bread with a rolling pin to flatten slightly.
- Spread approximately 2 tablespoons of the mushroom filling evenly onto each bread slice.
- Roll up each slice tightly and secure with a toothpick.
- Place the roll-ups seam-side down on a baking sheet.
- Cover loosely with plastic wrap and chill in the refrigerator for at least 1 hour.
- Melt the remaining 2 tablespoons of margarine. Brush the melted margarine evenly over the chilled roll-ups.
- Bake for 15-20 minutes, or until the bread is golden brown and the filling is heated through.
- Remove from oven and carefully remove the toothpicks.
- Cut each roll into 3 equal pieces and serve immediately. Enjoy!
