How to Make Toasted Mushroom Roll Ups

  1. Preheat oven to 400°F (200°C).
  2. In a large skillet, melt 1 tablespoon of margarine over medium heat.
  3. Add the sliced mushrooms, chopped onion, and bell pepper. Sauté for 5-7 minutes, or until the vegetables are tender.
  4. Stir in the minced garlic and sauté for 1 minute more, until fragrant.
  5. Remove from heat and stir in the mozzarella cheese and chopped basil. Season generously with salt and pepper to taste. Set aside to cool slightly.
  6. Gently roll out each slice of bread with a rolling pin to flatten slightly.
  7. Spread approximately 2 tablespoons of the mushroom filling evenly onto each bread slice.
  8. Roll up each slice tightly and secure with a toothpick.
  9. Place the roll-ups seam-side down on a baking sheet.
  10. Cover loosely with plastic wrap and chill in the refrigerator for at least 1 hour.
  11. Melt the remaining 2 tablespoons of margarine. Brush the melted margarine evenly over the chilled roll-ups.
  12. Bake for 15-20 minutes, or until the bread is golden brown and the filling is heated through.
  13. Remove from oven and carefully remove the toothpicks.
  14. Cut each roll into 3 equal pieces and serve immediately. Enjoy!
