How to Make Toffee Coffee Cookies

  1. Preheat oven to 350°F (175°C).
  2. Grease a 9x13 inch baking pan.
  3. In a large bowl, combine 1 box (15.25 oz) chocolate cake mix, 1/2 cup vegetable oil, 1/2 cup brewed coffee, 1 cup chocolate chips, and 2 large eggs. Mix well.
  4. Press half of the cookie dough mixture evenly into the bottom of the prepared pan.
  5. Bake for 8 minutes.
  6. In a double boiler or heat-safe bowl set over a pan of simmering water, melt 1/2 cup butter, 14 oz caramel candies, 1/4 cup brewed coffee, and 1 (14 oz) can sweetened condensed milk. Stir until smooth and caramels are completely melted.
  7. Pour the caramel mixture evenly over the partially baked crust.
  8. Sprinkle 1/2 cup chopped pecans over the caramel layer.
  9. Drop the remaining cookie dough by small spoonfuls over the caramel layer.
  10. Sprinkle with 1 cup chopped toffee bars and the remaining 1/2 cup chopped pecans.
  11. Bake for an additional 25-30 minutes, or until golden brown and a toothpick inserted into the center comes out with moist crumbs.
  12. Let the cookies cool completely in the pan before cutting into squares.
