How to Make Turtle Cake Bars

  1. In a heavy pot, melt 1 cup (2 sticks) unsalted butter, 1 (14 ounce) can sweetened condensed milk, and 1/2 cup packed light brown sugar over medium heat, stirring constantly until smooth and melted.
  2. Remove from heat and set aside to cool slightly.
  3. In a large bowl, combine 1 box (15.25 ounces) yellow cake mix, the melted butter mixture from step 2, and 1 (12 ounce) can evaporated milk. Stir well by hand until just combined. The batter will be sticky.
  4. Grease a 9x13 inch baking pan. Press half of the batter evenly into the prepared pan.
  5. Bake at 350°F (175°C) for 12-15 minutes, or until lightly golden.
  6. Remove from oven and evenly pour the reserved caramel mixture over the baked cake layer.
  7. Sprinkle 1 cup chopped pecans and 1 cup semi-sweet chocolate chips evenly over the caramel layer.
  8. Gently press the pecans and chocolate chips into the caramel.
  9. Drop spoonfuls of the remaining cake batter over the caramel and pecan/chocolate layer. Spread carefully with a spatula. The batter will not completely cover.
  10. Bake for an additional 20-22 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out with moist crumbs.
  11. Let cool completely in the pan before cutting into bars. Enjoy!
