How to Make Tuscan Beef Stew

  1. In your slow cooker, combine the seared beef, onions, carrots, celery, garlic, crushed tomatoes, beef broth, red wine, tomato paste, dried oregano, dried basil, salt, and pepper.
  2. Cover and cook on low for 8-9 hours, or until the beef is incredibly tender.
  3. Stir in the cannellini beans during the last 30 minutes of cooking.
  4. If desired, remove some of the stew liquid before serving and increase the thickness by creating a slurry of 1 tbsp of cornstarch and 2 tbsp cold water. Whisk the slurry until smooth and stir it into the stew. Cook for additional 5 minutes or until desired thickness is reached.
