How to Make Vidalia Onion Quiche

  1. Preheat oven to 350°F (175°C).
  2. Melt 2 tablespoons of butter in a large skillet over medium heat. Add 3 large Vidalia onions, thinly sliced.
  3. Sauté onions for 15-20 minutes, stirring occasionally, until softened and translucent.
  4. Remove from heat and set aside to cool slightly.
  5. In a 9-inch pie plate, sprinkle 1 cup (200g) of shredded Gruyere cheese.
  6. Evenly spread the cooled onions over the cheese.
  7. In a large bowl, whisk together 6 large eggs, 1 cup (240ml) heavy cream, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  8. Pour the egg mixture over the onions and cheese. Sprinkle with 1/2 cup (50g) of remaining Gruyere cheese and 2 tablespoons chopped fresh chives.
  9. Bake for 40-50 minutes, or until the quiche is set and the crust is golden brown. A knife inserted near the center should come out clean.
  10. Let cool slightly before slicing and serving. Enjoy!
