How to Make Warm Potato Salad With Italian Dressing

  1. Cut 1.5 lbs of Yukon Gold potatoes into 1-inch bite-size pieces.
  2. Boil potatoes in a large pot of salted water (about 1 tsp salt) for 15-20 minutes, or until easily pierced with a fork.
  3. Drain potatoes and rinse under cold water to stop the cooking process. Set aside in a large bowl.
  4. While potatoes boil, sauté 1/2 cup thinly sliced shallots and 1/2 cup chopped bell pepper (any color) in 1 tbsp olive oil over medium heat for 5-7 minutes, until softened.
  5. In a small bowl, whisk together 1/4 cup Italian dressing, 2 tbsp olive oil, 1 tbsp red wine vinegar, 1 tsp Dijon mustard, 1/2 tsp dried oregano, 1/4 tsp garlic powder, salt and pepper to taste.
  6. Add the sautéed shallots and bell peppers to the potatoes. Pour the dressing over the potatoes and gently toss to combine.
  7. Serve warm or at room temperature. Garnish with fresh parsley (optional).
