How to Make Absolutely Amazing Almond Biscotti
- Preheat oven to 300°F (150°C).
- Lightly grease a large baking sheet with cooking spray or oil.
- If using whole, unblanched almonds, boil 2 cups of water in a microwave-safe bowl. Add almonds and let soak for 5 minutes. Drain and remove skins. Chop coarsely.
- In a medium bowl, whisk together 3 cups all-purpose flour, 1 teaspoon baking powder, 1/2 teaspoon baking soda, and 1/4 teaspoon salt.
- In a large bowl, cream together 1 cup (2 sticks) unsalted butter and 1 1/2 cups granulated sugar until light and fluffy using an electric mixer.
- Beat in 2 large eggs, 1 teaspoon almond extract, and 1 teaspoon vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in 1 1/2 cups coarsely chopped almonds.
- The dough will be thick and sticky. If too sticky to handle, add powdered sugar, 1 tablespoon at a time, until manageable. Mix thoroughly.
- Lightly dust a clean work surface with powdered sugar. Turn the dough out onto the surface.
- Divide the dough in half. Shape each half into a rectangle approximately 5x10 inches.
- Place the dough logs onto the prepared baking sheet.
- Bake for 30 minutes, or until the logs are set and lightly golden.
- Remove from oven and let cool for 10 minutes.
- Using a serrated knife, slice each log into 18 slices (approximately 1/2 inch thick).
- Arrange the biscotti slices, cut-side down, back onto the baking sheet.
- Bake for an additional 10 minutes.
- Flip the biscotti and bake for another 10 minutes, or until golden brown and crisp.
- Transfer the biscotti to a wire rack to cool completely.
- Once cooled, optionally dip or drizzle with melted white or dark chocolate.
- Store biscotti in an airtight container at room temperature. If they lose their crispness, revive them by baking at 300°F (150°C) for 5-10 minutes.
Chef's Tip for Extra Flavor
Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
