How to Make Your Next Chocolate Indulgence

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, whisk together 1 ½ cups (190g) all-purpose flour, 2 cups (400g) granulated sugar, ¾ cup (60g) unsweetened cocoa powder, 1 ½ tsp baking powder, 1 ½ tsp baking soda, and 1 tsp salt.
  3. Add 1 cup (240ml) buttermilk, ½ cup (120ml) vegetable oil, 2 large eggs, and 2 tsp vanilla extract to the dry ingredients. Beat with an electric mixer on medium speed for 2 minutes, until smooth.
  4. Add ½ cup (120ml) freshly brewed strong coffee and mix for another 2 minutes on medium speed.
  5. Divide batter evenly between the prepared cake pans.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let cakes cool in pans for 10 minutes before inverting onto wire racks to cool completely.
  7. While cakes cool, prepare the chocolate ganache: Chop 12 oz (340g) semi-sweet chocolate into small chunks and place in a large heatproof bowl.
  8. Heat 1 cup (240ml) heavy cream in a saucepan over medium heat until just simmering (do not boil).
  9. Pour hot cream over the chocolate and let it sit for 1 minute.
  10. Whisk gently until the chocolate is completely melted and the ganache is smooth and glossy.
  11. Once the cakes are completely cool, place one layer on a serving plate or cake stand.
  12. Spread about ½ of the ganache over the first cake layer.
  13. Top with the second cake layer, bottom side up.
  14. Spread the remaining ganache over the top and sides of the cake, allowing some to drip down the sides.
  15. Refrigerate for at least 1 hour, or preferably overnight, to allow the ganache to set.
  16. Enjoy your decadent chocolate indulgence!
