  6. Stir in 1 cup of orzo and 1/4 teaspoon of black pepper.
  7. Simmer for 2 minutes.
  8. Pour in 1 cup of broth and simmer until absorbed.
  9. Add another 1/2 cup of broth and repeat, simmering until absorbed.
  10. Add the remaining 1/4 cup of broth and simmer until the orzo is tender, about 10-12 minutes.
  11. Remove from heat and stir in the feta cheese, toasted pine nuts, and pesto.
  12. Gently fill the hollowed tomatoes with the orzo mixture.
  13. Place the filled tomatoes in a baking dish. Pour any remaining broth around the tomatoes.
  14. Cover the baking dish with foil.
  15. Bake for 15 minutes.
  16. Remove the foil and bake for an additional 10 minutes, or until the tomatoes are tender and the topping is lightly browned.
