- In a large pot, combine 1.5 lbs boneless, skinless chicken thighs, 2 cinnamon sticks, 4 cups chicken broth, and 1/2 teaspoon salt. Add enough water to cover the chicken completely.
- Bring to a boil, then reduce heat and simmer until the chicken is cooked through but still holds its shape (about 20-25 minutes).
- Remove chicken from broth; reserve the broth. Shred the chicken and set aside.
- In a large skillet, heat 2 tablespoons olive oil over medium-high heat. Add 1 medium head cauliflower, cut into 1-inch florets, and 1 medium eggplant, sliced 1/2-inch thick. Fry until golden brown and slightly tender, about 8-10 minutes per side.
- Remove the vegetables and drain on paper towels. Reserve 2 tablespoons of the cooking oil in the skillet.
- Add 1 large onion, chopped, and 2 cloves garlic, minced, to the skillet with the reserved oil. Sauté until softened, about 5 minutes.
- Transfer the sautéed onions and garlic to a large, oven-safe skillet (or a large pot that can go on the stovetop and in the oven).
- Arrange half of the fried eggplant and cauliflower over the onions and garlic.
- Layer 1 (28 ounce) can crushed tomatoes evenly over the vegetables.
- Sprinkle with 1/2 teaspoon salt.
- Add 3 cups long-grain rice evenly over the tomatoes.
- Pour 5-5 1/2 cups of the reserved chicken broth over the rice.
- Top with the shredded chicken.
- Cover the skillet and simmer on the stovetop for about 20 minutes, or until most of the liquid is absorbed.
- Transfer the covered skillet to a preheated 350°F (175°C) oven and bake for an additional 20 minutes, or until the rice is cooked through and the liquid is completely absorbed.
- Carefully invert the skillet onto a large serving platter to serve.
