  1. Prepare the pie crust (recipe not included, see recipe #237148) and chill for at least one hour.
  2. In a medium saucepan, combine 1 cup apple juice, ¾ cup granulated sugar, ¼ cup packed brown sugar, 2 teaspoons ground cinnamon, ½ teaspoon ground nutmeg, and 2 tablespoons cornstarch. Bring to a boil over medium heat, stirring constantly until thickened (about 2-3 minutes).
  3. Remove from heat and stir in 2 tablespoons lemon juice and 2 tablespoons unsalted butter.
  4. Set aside 2 tablespoons of the apple filling for glazing the top crust after baking.
  5. Gently toss 6-8 medium apples (peeled, cored, and sliced) with the remaining apple filling. Reserve 1 tablespoon of the apple filling to brush on the crust when the pie comes out of the oven.
  6. Roll out half of the chilled pie crust and place it into a 9-inch pie plate, leaving a 1-inch overhang.
  7. Pour the apple filling into the pie crust.
  8. Roll out the remaining pie crust and place it over the filling. Trim the edges to ½-inch overhang.
  9. Crimp and flute the edges of the crust. Use a fork to create a decorative edge if desired.
  10. Cut several slits in the top crust to allow steam to escape.
  11. Brush the top crust with 1 tablespoon of milk or cream.
  12. Sprinkle 1 tablespoon of granulated sugar and a dash of cinnamon over the top crust.
  13. Bake in a preheated oven at 375°F (190°C) for 50-60 minutes, or until the crust is golden brown and the filling is bubbly. If the crust begins to brown too quickly, cover the edges with foil.
  14. Let the pie cool completely on a wire rack before slicing and serving. Brush with the reserved 1 tablespoon of apple filling.
