How to Make Apple Hills Old Fashioned Apple Pie
- Prepare the pie crust (recipe not included, see recipe #237148) and chill for at least one hour.
- In a medium saucepan, combine 1 cup apple juice, ¾ cup granulated sugar, ¼ cup packed brown sugar, 2 teaspoons ground cinnamon, ½ teaspoon ground nutmeg, and 2 tablespoons cornstarch. Bring to a boil over medium heat, stirring constantly until thickened (about 2-3 minutes).
- Remove from heat and stir in 2 tablespoons lemon juice and 2 tablespoons unsalted butter.
- Set aside 2 tablespoons of the apple filling for glazing the top crust after baking.
- Gently toss 6-8 medium apples (peeled, cored, and sliced) with the remaining apple filling. Reserve 1 tablespoon of the apple filling to brush on the crust when the pie comes out of the oven.
- Roll out half of the chilled pie crust and place it into a 9-inch pie plate, leaving a 1-inch overhang.
- Pour the apple filling into the pie crust.
- Roll out the remaining pie crust and place it over the filling. Trim the edges to ½-inch overhang.
- Crimp and flute the edges of the crust. Use a fork to create a decorative edge if desired.
- Cut several slits in the top crust to allow steam to escape.
- Brush the top crust with 1 tablespoon of milk or cream.
- Sprinkle 1 tablespoon of granulated sugar and a dash of cinnamon over the top crust.
- Bake in a preheated oven at 375°F (190°C) for 50-60 minutes, or until the crust is golden brown and the filling is bubbly. If the crust begins to brown too quickly, cover the edges with foil.
- Let the pie cool completely on a wire rack before slicing and serving. Brush with the reserved 1 tablespoon of apple filling.
Chef's Tip for Extra Flavor
Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
