  7. Return the beef to the pan. Stir in 1 cup pitted prunes, 2 tablespoons red wine vinegar, and 1 tablespoon brown sugar.
  8. Season generously with salt and pepper. Bring to a simmer, then cover the casserole and transfer to the preheated oven.
  9. Braise for 4 hours, or until beef is incredibly tender.
  10. Stir in 1 tablespoon Dijon mustard. Return to the oven for another 30 minutes.
