  2. Cook lasagna noodles according to package directions.

  13. Repeat layers: noodles, meat mixture, ricotta mixture, Monterey Jack cheese.
  14. Top with remaining noodles and the remaining enchilada sauce.
  15. Sprinkle with remaining Monterey Jack cheese.
  16. Bake for 30-40 minutes, or until bubbly and cheese is melted and golden brown.
  17. Let stand for 10 minutes before cutting and serving.
