  1. Heat 2 tablespoons of vegetable oil in a large saucepan over high heat.

  3. Add 2 pounds ripe tomatoes, chopped; 2 tablespoons grated fresh ginger; and 4 cloves garlic, minced. Bring to a simmer.
  4. Stir in 2 tablespoons chili powder, 1 cup water, ½ cup strong brewed coffee, ¼ cup tamarind paste, 2 tablespoons berbere spice blend, 1 teaspoon ground cumin, and 1 teaspoon ground coriander seeds. Bring to a simmer.
  5. Reduce heat to low and simmer for 40 minutes, stirring occasionally.
  6. Add ¼ cup honey and simmer for another 10 minutes, or until the sauce has thickened enough to coat the back of a spoon.
  7. Remove from heat and let cool completely.
  8. Store in an airtight container in the refrigerator for up to 5 days.
