How to Make 1200 Watt Microwave Peanut Brittle

  1. Line a baking sheet with foil or parchment paper and lightly grease with butter or cooking spray.
  2. In a 1-cup measuring cup, combine 1 tablespoon molasses and enough light corn syrup to fill the cup (approximately 5 tablespoons).
  3. In an 8-cup Pyrex bowl, combine the corn syrup mixture and 1 cup granulated white sugar. Microwave on high for 2 minutes, remove, stir well, and microwave for another 1 minute.
  4. Remove from the microwave and add 1 cup of unsalted peanuts. Stir into the bubbling sugar mixture and microwave for 2 minutes.
  5. Remove from the microwave and stir in 2 tablespoons of unsalted butter and 1 teaspoon of vanilla extract. Microwave for 1 minute.
  6. Remove from the microwave and quickly stir in 1 teaspoon of baking soda. The mixture will become white and foamy. Immediately pour onto the prepared baking sheet and spread thinly.
  7. Let cool completely at room temperature or speed up the process by cooling in the refrigerator.
  8. To easily clean the mixing bowl, soak it in hot, soapy water.
  9. For an extra touch of warmth, add 1 teaspoon of ground cinnamon to the sugar in step 3. To amp up the heat, include both cinnamon and 1/3 teaspoon of cayenne pepper along with the sugar.
