How to Make Apple Cranberry Pork Roast
- Pat the pork roast dry with paper towels. Heat 2 tablespoons of canola oil in a large skillet over medium-high heat. Brown the roast on all sides, about 2-3 minutes per side. Transfer the browned roast to your slow cooker.
- Peel and chop 2 large apples (such as Honeycrisp or Fuji) and add them to the slow cooker along with 1 (12 ounce) bag of fresh cranberries, 1 cup of chicken broth, 1/2 cup of apple cider, 1/4 cup brown sugar, 2 tablespoons of Dijon mustard, 1 teaspoon of dried thyme, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
