How to Make Acadia S Crock Pot Chicken Cacciatore
- Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add 1 chopped onion and 1 chopped carrot; cook until softened, about 5 minutes.
- Add 1 chopped bell pepper and cook for another 3 minutes.
- In a 3-quart (or larger) crock-pot, combine 1.5 lbs boneless, skinless chicken thighs (cut into 1-inch pieces), the cooked vegetables, 28 ounces crushed tomatoes, 1 teaspoon black pepper, 1 teaspoon salt, 1 teaspoon Italian seasoning, 1/2 teaspoon dried basil, 1/4 teaspoon dried parsley, and 1 teaspoon sugar.
