How to Make African Chop
- In a large Dutch oven, combine 1.5 lbs stew beef, 2 beef bouillon cubes, 1 tsp salt, 1/2 tsp crushed red pepper, 1 tbsp chili powder, 1/2 tsp chili flakes, 1 tbsp curry powder, and 4 cups water.
- Stir well and bring to a rolling boil over high heat.
- Reduce heat to low, cover, and simmer for 1 hour.
- While the stew simmers, cut 4 slices bacon into small pieces. Fry in a skillet over medium heat until the fat is rendered and the bacon is crispy.
- Remove the bacon from the skillet, reserving the bacon fat in the skillet. Set the bacon aside.
- Add 1 cup chopped collard greens (or other greens) and 1/2 cup chopped onion to the skillet with the bacon fat. Sauté for 4 minutes, stirring constantly, until the greens are slightly wilted.
- Add the sautéed greens and onions, 1 (28 ounce) can tomato puree, the reserved cooked bacon, and 2 tablespoons peanut butter to the stew. Stir to combine.
- Cover and simmer for another hour, or until the beef is tender.
- Serve hot over rice or noodles. Crusty bread is perfect for sopping up the flavorful gravy!
- Enjoy your delicious home-cooked African Chop!
