How to Make African Rice Dinner
- Rinse 1 cup of long-grain rice under cold water until the water runs clear.
- In a large 3-quart pot or Dutch oven, heat 2 tablespoons of olive oil over medium heat. Add 1 medium chopped onion and 2 cloves of minced garlic and saute for 5 minutes, until softened.
- Stir in 1 teaspoon of ground ginger, 1/2 teaspoon of ground cumin, 1/4 teaspoon of cayenne pepper (optional), and 1/4 teaspoon of salt. Cook for 1 minute more, stirring constantly.
- Add 1 (14.5 ounce) can of diced tomatoes (undrained), 1 (15 ounce) can of chickpeas (drained and rinsed), 1 cup of frozen peas, 1 cup of vegetable broth, and the rinsed rice. Bring to a boil.
- Reduce heat to low, cover, and simmer for 45-50 minutes, or until the rice is cooked and the liquid is absorbed. Stir occasionally and add more vegetable broth if needed to maintain moisture.
- Fluff the rice with a fork before serving. Garnish with fresh cilantro or parsley (optional). Serve hot and enjoy!
- Divide into meal prep containers for easy lunches throughout the week.
Chef's Tip for Extra Flavor
Elevate your dish with simple flavor boosters! A final flourish of freshly chopped herbs can add incredible brightness, while a squeeze of lemon or lime juice right before serving can awaken all the flavors. Don't underestimate a sprinkle of quality finishing salt or a drizzle of good olive oil to make your creation shine.
