How to Make All Purpose Chicken Broth From The Crock Pot
- Place 2 large carrots (chopped), 2 celery stalks (chopped), and 1 medium onion (quartered) in the bottom of your slow cooker.
- Place one whole 3-4 lb chicken (or 2 lbs chicken quarters), neck up, on top of the vegetables.
- Season generously with salt, pepper, and your favorite herbs (optional – thyme, bay leaf, parsley are great choices).
- Pour 8 cups of water over the chicken and vegetables. Cover and cook on low for 8-9 hours, or on high for 4-5 hours until chicken is cooked through.
- Carefully remove the chicken from the pot and let it cool completely before shredding.
- Strain the broth through a fine-mesh sieve or cheesecloth, pressing on the solids to extract as much liquid as possible. Skim off excess fat from the surface.
- This broth is double strength. Dilute with an equal amount of water (8 cups) for standard strength broth, or adjust to your preferred taste.
- Once cool, shred the chicken meat, discarding skin and bones. This shredded chicken is also perfect for salads or other recipes!
