How to Make Almond Filled Cookie Cake

  1. Preheat oven to 325°F (160°C). Place a cookie sheet in the oven while it preheats.
  2. Grease a 9-inch springform pan.
  3. In a large bowl, combine all crust ingredients (see below) and mix at low speed until a dough forms. If desired, refrigerate for easier handling.
  4. Divide the dough in half. Press half of the dough into the bottom of the prepared pan to form the crust.
  5. In a medium bowl, combine all filling ingredients (see below) and mix well.
  6. Spread the filling evenly over the crust, leaving a 1/2-inch border.
  7. Between two sheets of waxed paper, roll out the remaining dough into a 9-inch circle.
  8. Carefully remove the top sheet of waxed paper and place the dough circle over the filling.
  9. Remove the bottom sheet of waxed paper and gently press the dough into place.
  10. Sprinkle the top with slivered almonds.
  11. Place the springform pan on the preheated cookie sheet.
  12. Bake for 65-75 minutes, or until the top is light golden brown.
  13. Let cool in the pan for 15 minutes.
  14. Remove the sides of the springform pan.
  15. Let cool completely before serving.

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
