How to Make Almond Filled Cookie Cake
- Preheat oven to 325°F (160°C). Place a cookie sheet in the oven while it preheats.
- Grease a 9-inch springform pan.
- In a large bowl, combine all crust ingredients (see below) and mix at low speed until a dough forms. If desired, refrigerate for easier handling.
- Divide the dough in half. Press half of the dough into the bottom of the prepared pan to form the crust.
- In a medium bowl, combine all filling ingredients (see below) and mix well.
- Spread the filling evenly over the crust, leaving a 1/2-inch border.
- Between two sheets of waxed paper, roll out the remaining dough into a 9-inch circle.
- Carefully remove the top sheet of waxed paper and place the dough circle over the filling.
- Remove the bottom sheet of waxed paper and gently press the dough into place.
- Sprinkle the top with slivered almonds.
- Place the springform pan on the preheated cookie sheet.
- Bake for 65-75 minutes, or until the top is light golden brown.
- Let cool in the pan for 15 minutes.
- Remove the sides of the springform pan.
- Let cool completely before serving.
