  • Navel Oranges
  • Red Grapefruit
  • White Grapefruit
  • 1 lemon
  • 1 lime
  • 1/2 cup granulated sugar
  • Almond Extract
  • Sliced Almonds

How to Make Almond Sunshine Citrus

  1. Zest oranges, grapefruit, lemon, and lime to obtain 1 tablespoon of mixed citrus zest. Set aside.
  2. Cut a thin slice from the top and bottom of each citrus fruit.
  3. Place each fruit cut-side down and use a sharp knife to remove the peel and white pith.
  4. Over a bowl, carefully separate each citrus fruit segment from the membranes.
  5. Place the segmented citrus fruit in a glass bowl.
  6. Set aside 1/2 cup of fresh citrus juice.
  7. In a small saucepan, combine 1/2 cup granulated sugar, the reserved citrus zest, and the reserved 1/2 cup citrus juice.
  8. Bring the mixture to a boil over medium heat.
  9. Reduce heat to low and simmer uncovered for 10 minutes, or until slightly thickened.
  10. Remove from heat and let cool completely.
  11. Stir in 1 teaspoon of almond extract.
  12. Pour the cooled citrus syrup over the segmented citrus fruit.
  13. Cover and refrigerate overnight to allow the flavors to meld.
  14. Just before serving, sprinkle with 1/4 cup slivered almonds.
