How to Make Amarula Drumsticks
- Preheat oven to 200°C (400°F).
- Prepare the drumsticks: Using a small sharp knife, carefully loosen the skin around the bone of each drumstick and push the skin down towards the bone, creating a pocket.
- Cover the exposed bone of each drumstick with a small piece of aluminum foil.
- In a shallow dish, lightly dust the drumsticks with seasoned flour.
- In a separate bowl, whisk together 2 tablespoons chopped fresh chives, 2 tablespoons orange marmalade, 1 tablespoon lemon juice, 1/2 cup Amarula cream, and 1/2 teaspoon salt.
- Coat each drumstick thoroughly in the Amarula mixture, ensuring they are evenly covered.
- Arrange the coated drumsticks in an ovenproof dish.
- Bake for 45 minutes, or until the drumsticks are golden brown and crispy.
- Remove the foil from the exposed bones.
- Continue baking for another 10-15 minutes, or until the internal temperature reaches 75°C (165°F).
- While the drumsticks are baking, prepare for serving: Wrap a fresh bay leaf around each exposed bone and secure it with a toothpick.
- Remove from oven and let rest for 5 minutes before serving warm or at room temperature.
