How to Make Amarula Drumsticks

  1. Preheat oven to 200°C (400°F).
  2. Prepare the drumsticks: Using a small sharp knife, carefully loosen the skin around the bone of each drumstick and push the skin down towards the bone, creating a pocket.
  3. Cover the exposed bone of each drumstick with a small piece of aluminum foil.
  4. In a shallow dish, lightly dust the drumsticks with seasoned flour.
  5. In a separate bowl, whisk together 2 tablespoons chopped fresh chives, 2 tablespoons orange marmalade, 1 tablespoon lemon juice, 1/2 cup Amarula cream, and 1/2 teaspoon salt.
  6. Coat each drumstick thoroughly in the Amarula mixture, ensuring they are evenly covered.
  7. Arrange the coated drumsticks in an ovenproof dish.
  8. Bake for 45 minutes, or until the drumsticks are golden brown and crispy.

  11. While the drumsticks are baking, prepare for serving: Wrap a fresh bay leaf around each exposed bone and secure it with a toothpick.
