How to Make Baked Marinated Tofu

  1. Freeze the block of tofu (unopened) for at least 24 hours, and up to 1 week.
  2. Transfer the frozen tofu to the refrigerator and thaw completely (approximately 24 hours).
  3. Once thawed, remove the tofu from its packaging and press out excess water using paper towels. Gently press to remove as much liquid as possible.
  4. Preheat your oven to 350°F (175°C).
  5. Cut the pressed tofu into 1-inch cubes.
  6. In a 9x13 inch baking dish, whisk together the marinade ingredients: 2 cloves garlic (minced), 1/4 cup soy sauce, 2 tablespoons olive oil, 1 tablespoon maple syrup, 1 teaspoon sesame oil, 1/2 teaspoon ground ginger, and 1/4 teaspoon black pepper.
  7. Add the tofu cubes to the marinade and gently toss to coat evenly.
  8. Bake for 45-50 minutes, turning the tofu cubes 3-4 times for even browning and to ensure the marinade is absorbed or evaporated. Tofu is ready when golden brown and crispy.
  9. Serve immediately or cool completely and store in an airtight container in the refrigerator for up to 1 week. Great in salads, grain bowls, or as a standalone dish!
