Ingredients for Angel Food Candy

  • White Sugar
  • Dark Corn Syrup
  • 1/4 cup white vinegar
  • 1 teaspoon baking soda
  • Semisweet Chocolate Morsels
  • Vegetable Shortening

How to Make Angel Food Candy

  1. Butter a 9x13 inch baking dish.
  2. In a medium saucepan over medium heat, combine 2 cups sugar, 1/2 cup light corn syrup, and 1/4 cup white vinegar.
  3. Cook, stirring constantly, until the sugar completely dissolves.
  4. Increase the heat slightly and continue to cook, without stirring, to 300-310°F (149-154°C) using a candy thermometer. A small amount of syrup dropped into a glass of ice water should form hard, brittle threads.
  5. Carefully remove from heat and immediately stir in 1 teaspoon of baking soda. The mixture will foam up.
  6. Pour the mixture into the prepared 9x13 inch baking dish. Do not spread; the mixture will not fill the pan.
  7. Allow to cool completely and harden at room temperature. This may take several hours.
  8. In a medium, microwave-safe bowl, melt 1 cup of semi-sweet chocolate morsels and 1 tablespoon of shortening. Microwave in 30-second intervals, stirring after each, until completely smooth and melted.
  9. Once the candy is completely cool, break it into bite-sized pieces.
  10. Dip each candy piece into the melted chocolate, ensuring it's fully coated.
  11. Place the chocolate-covered candies onto waxed paper to set.
  12. Let the chocolate set completely before storing. Store in an airtight container at room temperature.

Chef's Tip for Extra Flavor

Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
