How to Make Animal Cracker Cookies

  1. Whisk together 2 1/2 cups all-purpose flour, 1 teaspoon baking powder, 1/2 teaspoon salt, 1/4 teaspoon ground nutmeg, and 1/8 teaspoon ground mace in a small bowl. Set aside.
  2. In the bowl of an electric mixer, beat 1 cup (2 sticks) unsalted butter on high speed for 2 minutes.
  3. Reduce speed to medium; gradually add 1 1/2 cups granulated sugar and beat for 2 minutes, scraping down the sides of the bowl as needed.
  4. Add 1 large egg and 1 teaspoon vanilla extract. Beat for 1 minute, scraping down the sides.
  5. Add half of the dry ingredients to the wet ingredients.
  6. Beat on low speed until most of the flour is incorporated.
  7. Add the remaining dry ingredients and beat until the dough pulls away from the sides of the bowl (2-3 minutes).
  8. Turn the dough out onto a lightly floured surface and divide it into two equal portions.
  9. Shape each portion into a disk, wrap in plastic wrap, and refrigerate for at least 2 hours or up to 2 days.
  10. Let the dough sit at room temperature for 5 minutes before rolling.
  11. Place each dough disk between two large sheets of plastic wrap.
  12. Roll the dough to 1/8 inch thickness. Remove the top sheet of plastic wrap.
  13. Carefully transfer the dough to a lightly floured surface. Lightly dust the top with flour.
  14. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  15. Dip your cookie cutters in flour before cutting out the shapes.
  16. Bake for 14-16 minutes, or until very light golden brown.
  17. Transfer cookies to a wire rack to cool completely.
