How to Make Apple Pumpkin Bisque
- Melt 2 tablespoons of butter over medium heat in a large, heavy saucepan.
- Sauté 1 medium yellow onion, chopped, and 1 tablespoon grated fresh ginger until the onion is tender, about 4 minutes.
- Add 1 (15-ounce) can pumpkin puree, 1 cup applesauce, 4 cups chicken broth, 2 tablespoons honey, 1 tablespoon apple cider vinegar, 1 cinnamon stick, 1/4 teaspoon cayenne pepper (or to taste), 1/4 teaspoon ground nutmeg, 1 teaspoon salt, and 1/2 teaspoon black pepper. Bring to a simmer, then reduce heat and cook for 15 minutes, stirring occasionally, until the flavors have melded.
- Remove the cinnamon stick. Stir in 1/2 cup sour cream or crème fraîche just before serving. Garnish with a dollop of sour cream and a sprinkle of cinnamon (optional).
