- All Purpose Flour
- ¾ cup packed light brown sugar
- ¼ teaspoon salt
- ½ teaspoon baking soda
- Canola Oil
- Apple Juice
- 1 cup apricot preserves
How to Make Apricot Oatmeal Bars
- Preheat oven to 325°F (160°C).
- Lightly grease an 8x12 inch baking dish with nonstick cooking spray.
- In a large bowl, combine 2 cups rolled oats, 1 cup all-purpose flour, ¾ cup packed light brown sugar, ½ teaspoon baking soda, and ¼ teaspoon salt. Mix well using your fingers.
- Drizzle in ¼ cup vegetable oil and ¼ cup apricot nectar (or juice) and mix with your fingers until just combined.
- Set aside ½ cup of the oat mixture for the topping.
- Press the remaining oat mixture evenly into the bottom of the prepared baking dish.
- Spread 1 cup apricot preserves evenly over the oat base.
- Sprinkle the reserved oat topping evenly over the apricot preserves.
- Bake for 30-40 minutes, or until golden brown and set. Insert a toothpick to check for doneness - it should come out with a few moist crumbs attached.
- Let cool completely in the baking dish on a wire rack before cutting.
- Cut into 15 bars.
