  • Quick Cooking Oats
  • All Purpose Flour
  • ¾ cup packed light brown sugar
  • ¼ teaspoon salt
  • ½ teaspoon baking soda
  • Canola Oil
  • Apple Juice
  • 1 cup apricot preserves

How to Make Apricot Oatmeal Bars

  1. Preheat oven to 325°F (160°C).
  2. Lightly grease an 8x12 inch baking dish with nonstick cooking spray.
  3. In a large bowl, combine 2 cups rolled oats, 1 cup all-purpose flour, ¾ cup packed light brown sugar, ½ teaspoon baking soda, and ¼ teaspoon salt. Mix well using your fingers.
  4. Drizzle in ¼ cup vegetable oil and ¼ cup apricot nectar (or juice) and mix with your fingers until just combined.
  5. Set aside ½ cup of the oat mixture for the topping.
  6. Press the remaining oat mixture evenly into the bottom of the prepared baking dish.
  7. Spread 1 cup apricot preserves evenly over the oat base.
  8. Sprinkle the reserved oat topping evenly over the apricot preserves.
