How to Make Apricot Pork Roast With Stuffing
- Spray the inside of your slow cooker with cooking spray.
- In a large bowl, combine 1 cup dried stuffing mix, 1 cup chicken broth, 1 cup chopped dried apricots, and 1/2 cup chopped yellow onion. Mix well.
- Place a 3-4 pound boneless pork loin roast in the slow cooker.
- Pour the stuffing mixture evenly over the pork roast.
- In a small bowl, whisk together 1/4 cup apricot jam and 2 tablespoons apple cider vinegar. Brush the mixture over the top of the pork roast.
- Cover the slow cooker and cook on low for 8 hours, or until the pork is fork-tender and the internal temperature reaches 145°F (63°C).
- Before serving, gently stir the stuffing to combine and fluff it up.
