How to Make Apricot Pork Roast With Stuffing

  1. Spray the inside of your slow cooker with cooking spray.
  2. In a large bowl, combine 1 cup dried stuffing mix, 1 cup chicken broth, 1 cup chopped dried apricots, and 1/2 cup chopped yellow onion. Mix well.
  3. Place a 3-4 pound boneless pork loin roast in the slow cooker.
  4. Pour the stuffing mixture evenly over the pork roast.
  5. In a small bowl, whisk together 1/4 cup apricot jam and 2 tablespoons apple cider vinegar. Brush the mixture over the top of the pork roast.
