- Idaho Potatoes
- 1 (14-ounce) can artichoke hearts, drained
- 1/2 cup (1 stick) unsalted butter

How to Make Artichoke Mashed Potatoes
- Peel and chop 2 lbs Yukon Gold potatoes into 1-inch cubes.
- Place potatoes in a large pot and cover with cold water. Add 1 teaspoon salt. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are fork-tender.
- While potatoes are cooking, drain one (14-ounce) can of artichoke hearts. Roughly chop the artichoke hearts.
- Drain the potatoes and return them to the pot.
- Add 1/2 cup (1 stick) of unsalted butter, 1/2 cup milk, and the chopped artichoke hearts to the pot.
- Mash the potatoes and artichokes together using a potato masher or electric mixer until smooth and creamy. Add more milk if needed to reach desired consistency.
- Stir in salt and freshly ground black pepper to taste.
