How to Make Artichoke White Bean Soup
- Preheat oven to 400°F (200°C).
- In a food processor, combine 14 oz (400g) canned artichoke hearts (drained), 1 (15-ounce) can great northern beans (drained and rinsed), 1/2 cup (120ml) vegetable broth, and 1 clove garlic. Puree until smooth.
- Heat 1 tablespoon olive oil in a medium saucepan over medium heat.
- Add 2 cloves minced garlic and sauté for 1 minute until fragrant.
- Pour in the artichoke and bean puree. Add 4 cups (960ml) vegetable broth and bring to a simmer.
- Reduce heat and simmer for 10-15 minutes, stirring occasionally, until heated through and flavors have melded.
