How to Make Asia Nora Mint Raita
- If you have time, line a colander with cheesecloth and place 1 cup of plain yogurt inside. Refrigerate for at least 1 hour (or up to overnight) to drain excess whey for a thicker raita.
- While the yogurt drains (or if skipping this step), finely grate 1 medium cucumber. Squeeze the grated cucumber firmly over the sink to remove as much excess water as possible.
- In a medium bowl, gently combine the drained yogurt (or undrained if time is short), the squeezed cucumber, 1 tablespoon finely chopped fresh mint, and 1/2 teaspoon ground cumin.
- Season generously with salt and freshly ground black pepper to taste. Start with 1/2 teaspoon of salt and adjust according to your preference.
