  1. Place 5 bone-in chicken drumsticks in a slow cooker with 2 (10 ounce) cans of Rotel diced tomatoes and green chilies (undrained). Cook on low for 7 hours, or until chicken is tender.
  2. Remove chicken from slow cooker and shred, discarding bones.
  3. In a large bowl, combine shredded chicken with 1 cup shredded cheddar cheese, 1/2 cup chopped onion, and 1/2 cup of the Rotel tomato mixture from the slow cooker.
