How to Make Awesome Easy Cheese And Chicken Enchiladas
- Place 5 bone-in chicken drumsticks in a slow cooker with 2 (10 ounce) cans of Rotel diced tomatoes and green chilies (undrained). Cook on low for 7 hours, or until chicken is tender.
- Remove chicken from slow cooker and shred, discarding bones.
- In a large bowl, combine shredded chicken with 1 cup shredded cheddar cheese, 1/2 cup chopped onion, and 1/2 cup of the Rotel tomato mixture from the slow cooker.
- Lightly brush 6 corn tortillas with vegetable shortening. Microwave each tortilla on a microwave-safe plate for approximately 1 minute, or until softened.
- Fill each tortilla with 2-3 tablespoons of the chicken and cheese mixture. Roll up tightly and place seam-down in a greased 9x13 inch baking dish.
- In a small bowl, whisk together 1/4 cup of the remaining Rotel mixture and 1/2 cup sour cream.
- Pour the sour cream mixture evenly over the enchiladas.
- Top with the remaining shredded cheese (about 1 cup).
- Cover with aluminum foil and bake at 350°F (175°C) for 25 minutes.
