How to Make Awesome Rice Pilaf
- Melt 4 tablespoons of butter in a large Dutch oven or oven-safe pot over medium heat.
- Add 1 medium chopped onion and 2 chopped celery stalks. Cook until softened, about 5 minutes.
- Add 1 ½ cups of long-grain rice and cook, stirring frequently, until lightly browned and fragrant (about 5-7 minutes).
- Preheat oven to 350°F (175°C).
- Stir in 4 cups of chicken (or vegetable) broth, 1 teaspoon salt, ½ teaspoon black pepper, ½ teaspoon dried thyme, ½ cup chopped carrots, ½ cup chopped bell pepper, and ½ cup chopped mushrooms (if using). Add 1 cup cooked, crumbled ground beef or leftover meat (optional).
- Bring to a boil over medium heat.
- Reduce heat to low, cover tightly with foil, and then put the lid on top.
- Bake for 45 minutes.
- Remove from oven and let stand, covered, for 15 minutes.
