How to Make Bacon And Cabbage Home Fries

  1. Peel and quarter 2 lbs Yukon Gold potatoes. Slice crosswise into 1/2-inch thick pieces.
  2. In a large saucepan, cover potatoes with salted water. Bring to a simmer and cook for 20 minutes, or until tender.
  3. Drain potatoes and set aside to cool slightly.
  4. While potatoes cook, cook 6 slices bacon in a large nonstick skillet over medium heat until crisp, about 8 minutes.
  5. Transfer bacon to paper towels to drain. Reserve 2 tablespoons of bacon fat; discard the rest.
  6. Add 1 medium onion, chopped, to the skillet with the reserved bacon fat and cook, stirring, until softened, about 3 minutes.
  7. Add 8 cups shredded green cabbage and 1/2 cup water to the skillet. Cook, stirring occasionally, until crisp-tender, about 4 minutes.
  8. Transfer cabbage mixture to a bowl and set aside.
  9. Wipe out the skillet. Add 1 tablespoon olive oil and the reserved bacon fat to the skillet. Heat over medium heat.
  10. Add the cooled potatoes to the skillet. Season generously with salt and pepper. Cook, turning occasionally, until golden brown and crispy, about 8-10 minutes.
  11. Stir in the cabbage mixture and cook until heated through, about 2 minutes.
  12. Crumble cooked bacon over the top and serve immediately.
