- 8-10 slices thin-cut bacon (about 8 oz)

How to Make Bacon Wrapped Trout
- Preheat grill to high heat. Lightly oil the grill grates.
- Prepare the trout: Gently place 1 clove of minced garlic and 1 sprig each of fresh sage and thyme inside the cavity of each trout fillet (about 4-6 oz each).
- Season generously with salt and freshly ground black pepper.
- Prepare the bacon wrap: Lay 2 slices of thin-cut bacon (about 4 oz total per fillet) overlapping slightly on a clean work surface.
- Place a trout fillet on top of the bacon. Wrap the bacon tightly around the fish, tucking in the ends. Secure with kitchen twine that has been soaked in cold water for at least 10 minutes (this prevents burning).
- Repeat steps 4 and 5 for remaining trout fillets.
- Grill the trout for 4-6 minutes per side, or until the bacon is crispy and the fish is cooked through and flakes easily with a fork.
- Carefully remove the twine and serve immediately. Garnish with extra fresh herbs, if desired.
