Ingredients for Bacon Floddies
- 1 kg potatoes, peeled and shredded
- 1 large onion, finely chopped
- 150g bacon, diced
- Self Raising Flour
- Salt And Black Pepper
- 2 large eggs, lightly beaten

How to Make Bacon Floddies
- Peel and shred the 1 kg potatoes. Place shredded potatoes in a colander and press firmly to squeeze out excess liquid. Transfer to a large bowl.
- Finely chop the 1 large onion and add it to the bowl with the 150g diced bacon, 100g flour, and salt and pepper to taste.
- Thoroughly mix all ingredients until well combined.
- Gently stir in the 2 lightly beaten eggs.
- Heat the 2 tablespoons of oil (or bacon fat) in a large frying pan over medium heat.
- Using a tablespoon, drop spoonfuls of the potato mixture into the hot pan, flattening slightly. Fry for 5-8 minutes per side, or until golden brown and cooked through, turning once halfway.
- Remove the cooked Floddies from the pan and drain on paper towels to absorb excess oil. Serve immediately with sausages and eggs (or enjoy on their own!).
