  • 1 kg potatoes, peeled and shredded
  • 1 large onion, finely chopped
  • 150g bacon, diced
  • Self Raising Flour
  • Salt And Black Pepper
  • 2 large eggs, lightly beaten
  • Oil

How to Make Bacon Floddies

  1. Peel and shred the 1 kg potatoes. Place shredded potatoes in a colander and press firmly to squeeze out excess liquid. Transfer to a large bowl.
  2. Finely chop the 1 large onion and add it to the bowl with the 150g diced bacon, 100g flour, and salt and pepper to taste.
  3. Thoroughly mix all ingredients until well combined.
  4. Gently stir in the 2 lightly beaten eggs.
  5. Heat the 2 tablespoons of oil (or bacon fat) in a large frying pan over medium heat.
  6. Using a tablespoon, drop spoonfuls of the potato mixture into the hot pan, flattening slightly. Fry for 5-8 minutes per side, or until golden brown and cooked through, turning once halfway.
  7. Remove the cooked Floddies from the pan and drain on paper towels to absorb excess oil. Serve immediately with sausages and eggs (or enjoy on their own!).
