How to Make Baked Couscous Pilaf

  1. Preheat oven to 450°F (232°C).
  2. In a large bowl, combine 1 cup couscous, 1 cup vegetable broth, 1 cup chopped carrots (about 2 medium), 1/2 cup chopped nuts (walnuts, pecans, or almonds work well), 1/4 cup dried cranberries (optional), 2 tablespoons olive oil, 1 teaspoon ground cumin, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
