How to Make Baked Pasta With Sausage Tomatoes And Cheese

- Cook 1 pound pasta according to package directions, omitting salt and fat. Drain and set aside.
- Remove casings from 1 pound Italian sausage (or substitute 1 pound sweet turkey Italian sausage).
- In a large nonstick skillet, cook sausage, 1/2 medium onion (chopped), and 2 cloves garlic (minced) over medium heat until sausage is browned and crumbled, about 8-10 minutes.
- Stir in 2 tablespoons tomato paste, 1 teaspoon salt, 1/2 teaspoon black pepper, and 2 (28 ounce) cans crushed tomatoes.
- Bring to a boil, then reduce heat, cover, and simmer for 10 minutes, stirring occasionally.
- Stir in cooked pasta and 1/4 cup chopped fresh basil.
- Coat a 4-quart casserole dish with cooking spray.
- Place half of the pasta mixture in the prepared casserole dish.
- Top with half of 8 ounces mozzarella cheese (shredded) and half of 4 ounces Parmesan cheese (shredded).
- Repeat layers with remaining pasta mixture, mozzarella, and Parmesan.
- Bake for 25-30 minutes, or until bubbly and heated through.
